Cancerians are delicate, sensitive, and nurturing just like Kkaenip Kimchi! Each leaf in this dish is seasoned individually but it’s all well worth the effort. The leaf itself lends an almost minty-like taste balanced by the spice and saltiness of the kimchi paste. It is perfect to wrap around a morsel of rice and adds elegance to any table.
LEO: KKAKDUGI (CUBED RADISH KIMCHI)
Kkakdugi is an immensely popular dish in Korea. The story goes that it was created for King Jeongjo of the Joseon Dynasty in the 18th century. The principal ingredient in this dish is the Korean radish (mu) which is chopped into bite-size cubes and then mixed with kimchi paste and fermented for a week. It is most commonly eaten with warm and hearty soups and stews like seollangtang (ox tail soup) and galbi-tang (short rib soup). When preparing this type of kimchi, you make a little cross shape incision in the cucumber and then stuff it with julienned carrots, scallions, white onions smothered in kimchi paste.
